DESCRIPTION:
Maitake mushrooms, botanically classified as Grifola frondosa, are edible mushrooms that are both foraged and cultivated for culinary and medicinal use. Also known as Hen of the Woods mushrooms for its similarity in appearance to the feathers of a chicken, Maitake mushrooms have many names including Klapperschwamm, Laubporling, Polypore en touffe, Kumotake mushroom, Ram's head, and Sheep's head. Maitake mushrooms thrive in temperate hardwood forests and are commonly found growing off of the dead roots of oak, elm, and maple trees. These mushrooms are used around the world in many different culinary applications and are also used in traditional medicines for their high nutritional content.

HOW TO PLANT:
The preparation of seeds is the most important part of the planting process. The result depends on how you have prepared the seeds.
Submerge an oak log that is 3 feet in length and 6 inc in width in cold water and soak it for two hours. Drill 25 to 30 holes in the log, using a drill fitted with a five-sixteenths-inch bit. Make the holes 1 1/2 inches deep. Fill each hole by mycelium and insert one 1-inch-long oak dowel inoculated with maitake mushroom spawn in each of the drilled holes. Tap the oak dowels in the holes with a rubber mallet. Heat one-quarter pound of cheese wax in a saucepan over low heat. Brush the melted wax over the oak dowels with a pastry brush and allow it to cool and set. Apply the wax once more to ensure a good seal to prevent insects and other fungi from entering. Position the log in a damp outdoor area, on two bricks to suspend it above the ground, or rest it upright against a wall. Keeping the log elevated prevents foreign mushroom spawn from colonizing. Water the log at two-week intervals; the log should feel moist, but not wet, at all times. Allow a minimum of six months for the maitakes to show visible signs of growth. Soaking in ice water for 24 hours creates an environment in the log that prompts the mushrooms to react as if it were spring when removed. Amateur cultivation of mycorrhizal and other soil mushrooms doesn’t give a guaranteed result because the harvest of mushrooms depends so much on the weather and many other factors. Nevertheless, if you “get your hand in it” and gain enough experience in the cultivation of mycorrhizal mushrooms, as well as with certain zeal, you can expect good results. Attention! A very important factor for the successful cultivation of mushrooms is the acidity of the soil. For this mushroom, the optimum acidity is Ph = 6,5 - 7. A more acidic soil (Ph is less than mentioned) must be deoxidized with a solution of quicklime (at the rate of 3 of lime per gallon of water per 10 ft2).
